    Mince is combined with bread rolls in this budget but beautiful meatloaf that also includes French herbs, paprika, garlic and parsley.

    Serves: 6 

    • 2 1/2 stale bread rolls
    • 3 tablespoons olive oil
    • 1 large onion, finely diced
    • 4 tablespoons diced fresh parsley
    • 1 clove garlic, finely diced
    • 1 tablespoon tomato puree
    • 1 teaspoon French herbs
    • 1 pinch cayenne pepper
    • 1/2 teaspoon sweet paprika
    • salt and pepper, to taste
    • 500g beef mince
    • 2 eggs
    • butter, as needed

    1. Preheat oven to 220 degrees C.
    2. Pour a little lukewarm water over rolls and soak.
    3. Heat oil in a small saucepan and saute onion until soft and translucent. Add garlic and parsley then saute for 2-3 minutes. Stir in tomato puree, herbs, cayenne, paprika, salt and pepper.
    4. Squeeze water from bread rolls. Mix together the bread, sauteed mixture, minced beef and eggs.
    5. Press into a loaf tin and bake in preheated oven for 50 minutes.
    6. Once the meatloaf is bubbling add a few pieces of butter on top.
    7. When the meatloaf is brown and cooked through turn oven off and allow to sit in there for 10 minutes.
