Cake with Apple Topping

    This is a fairly simple cake that is topped with apples stewed in white wine then coated in a red coconut glaze. Too good to be just a cake this is a dessert!

    Serves: 12 

    • Cake
    • 2 egg whites
    • 2 egg yolks
    • 2 tablespoons lukewarm water
    • 100g caster sugar
    • 1 teaspoon vanilla essence
    • 1 teaspoon rum
    • 1 teaspoon lemon juice
    • 1/2 cup (60g) flour
    • 1 teaspoon baking powder
    • Filling
    • 1kg apples
    • 1 cup (220g) caster sugar
    • 1 glass white wine or apple juice
    • Topping
    • 1 sachet red coloured jelly glaze
    • 100g desiccated coconut
    • To Decorate
    • whipped cream

    1. Cake: Preheat oven to 220 degrees C . Grease a round springform tin.
    2. Beat egg whites until stiff peaks form. Cream egg yolk with water, sugar and vanilla essence.
    3. Add rum and lemon juice then mix in the flour mixed with baking powder.
    4. Pour the batter into the prepared tin and bake in preheated oven for about 20 minutes.
    5. Filling: Peel and cut the apples. Place in a saucepan and cook with sugar and white wine on low heat until they are soft and mushy.
    6. Cool apple filling and pour over the base.
    7. Topping: Prepare glaze according to packet directions then mix with coconut and brush onto apple mixture. Refrigerate for a few hours then remove the tin.
    8. To Decorate: To serve, decorate with whipped cream.
