Sultana Roll Biscuits

    Cooked as a roll then cut into biscuits to serve; these sultana biscuits also contain aniseed powder, walnuts, sultanas and chocolate.

    Serves: 60 

    • 3-4 eggs
    • 1 1/4 cups (250g) caster sugar
    • 125g almonds or walnuts, coarsely diced
    • 100g mixed peel
    • 150g sultanas
    • 3 tablespoons aniseed powder
    • 1 teaspoon ground ginger
    • 50g chocolate, grated
    • 4 cups (500g) plain flour
    • 2 teaspoons baking powder
    • butter for brushing
    • 1-2 egg yolks, whisked with a little water

    1. Whisk eggs with sugar until light and fluffy. Knead all the ingredients together to form a firm dough, adding spices last.
    2. Divide the dough into 4 and roll each into a long log the length of the baking tray.
    3. Preheat oven to 150 degrees C. Bake logs in preheated oven for 25 minutes. Brush with egg wash and bake for an additional 5-10 minutes at 180 degrees C.
    4. Cut into diagonal slices and serve warm.

    Aniseed powder

    If unavailable at your local supermarket, you can find it in Asian speciality shops or online.
