Although we normally make these at Christmas they can be eaten all year round. Quick to prepare and bake they are decorated with lemon icing and desiccated coconut.


Serves: 60 

  • Biscuit
  • 150g butter
  • 1/2 cup (125g) caster sugar
  • 1 1/4 cups (125g) ground almonds
  • 1 3/4 cups (220g) plain flour
  • 1 teaspoon baking powder
  • Topping
  • icing sugar
  • lemon juice
  • desiccated coconut

Preparation:20min  ›  Cook:10min  ›  Extra time:1hour marinating  ›  Ready in:1hour30min 

  1. Biscuit: Beat butter until fluffy then stir in the sugar. Add almonds and sieve in flour and baking powder.
  2. Work into a dough then cover and chill for 1 hour.
  3. Grease a baking tray and preheat oven to 180 degrees C. Flour a work surface and roll out the dough on it.
  4. Cut out stars and place on the prepared baking tray.
  5. Bake in preheated oven for about 10-12 minutes. Let biscuits cool.
  6. Topping: Mix just enough icing sugar and lemon juice to make a smooth icing. Coat cooled biscuits with the icing and sprinkle over desiccated coconut.
