Homemade almond brittle is the flavour base for these festive biscuits. Ideal for afternoon teas with hot chocolate.


Serves: 70 

  • Almond Brittle
  • 25g butter
  • 25g caster sugar
  • 50g chopped almonds
  • Biscuit Dough
  • 1 egg, separated
  • 125g butter
  • 1/2 cup (125g) caster sugar
  • 1 teaspoon vanilla sugar
  • 2 cups (250g) plain flour
  • 1 pinch baking powder

  1. Almond Brittle: Gently heat butter and sugar in a small saucepan until the sugar dissolves. Add the almonds and heat briefly.
  2. Line a plate with baking paper or greased foil then spread mixture over it. Let set and then crumble.
  3. Biscuit Dough: Work the yolk, butter, sugar, vanilla sugar, flour, baking powder and brittle into a dough. Chill for 30 minutes.
  4. Preheat oven to 180 degrees C.
  5. Roll dough out thinly and cut out small biscuits. Brush with whisked egg white and transfer to a baking paper lined baking tray.
  6. Bake in preheated oven for 10-12 minutes or until golden brown.
