Chunky Walnut Biscuits

    These butter biscuits are filled with chucks of freshly cut walnuts for a perfect treat to have with coffee.

    Makes: 80 biscuits approximately

    • 200g butter
    • 1/2 cup (90g) icing sugar
    • 1 egg yolk
    • 1 pinch salt
    • 100g walnuts, coarsely cut
    • 2 1/2 cups (310g) plain flour

    Preparation:20min  ›  Cook:15min  ›  Extra time:1hour cooling  ›  Ready in:1hour35min 

    1. Preheat oven to 180 degrees C.
    2. Beat butter until fluffy. Stir in icing sugar and beat in egg yolks until smooth. Season with salt and knead in the walnuts and the flour.
    3. Shape dough into 4cm diameter rolls and press square with a flat object. Wrap and chill for 1 hour then cut into 5mm thick slices.
    4. Lay biscuits on a non-greased baking tray.
    5. Bake for 10 minutes at 180 degrees C then reduce the oven temperature to 130 degrees C. Bake for a further 5 minutes. Watch that the biscuits don't burn.

    If you have a scale - it would be best to weigh the ingredients in grams as this is originally a German recipe and with German cookie recipes, precision in ingredients is key - use 200 g unsalted butter, 100 g confectioner's sugar, 100 g walnuts, and 300 g flour (you see how the ratio is well coordinated)  -  11 Dec 2018  (Review from Allrecipes USA and Canada)


    Surprisingly easy! I made them with pecans this time but I liked the walnut ones I made with friends better. I’ve used butter substitute for my lactose intolerant husband - 175C for 7min and 130C for 5min worked well for this.  -  17 Jan 2018  (Review from Allrecipes UK & Ireland)
