Stary Cinnamon Biscuits

    These easy to make star shaped almond biscuits are gently flavoured with cinnamon and are gluten free.

    Serves: 25 

    • 300g blanched almonds
    • 4 small egg whites
    • 1 1/2 cups (250g) icing sugar
    • 1 teaspoon ground cinnamon
    • 1 lemon, zest grated
    • sugar, for rolling

    1. Finely grind the almonds in a food processor.
    2. Whisk egg white until stiff then gradually whisk in icing sugar.
    3. Set aside 3-4 tablespoons of the mixture in the refrigerator.
    4. Fold the cinnamon, almonds and lemon zest into the whisked egg whites then chill for 1 hour.
    5. Preheat oven to 160 degrees C. Line a baking tray with baking paper.
    6. Sprinkle work surface with sugar then roll out dough until about 5mm thick. Cut out stars and place on prepared baking tray.
    7. Coat stars with remaining egg white mixture and bake in preheated oven for 15-20 minutes.

    A Christmas favourite this year, in our house. Nice and easy for the children to make and rewarding as they taste so yummy. They don't stay in the tin for long! We added mixed spice to the biscuit recipe and a tablespoon of lemon juice to the icing.  -  31 Dec 2016  (Review from Allrecipes UK & Ireland)
