Bulk Butter Biscuits

    This is a large batch recipe for butter biscuits that can be used to make a variety of shapes. Once baked they are lightly iced with a lemon flavoured icing.

    Makes: 150 biscuits, depending on size

    • Biscuit Dough
    • 7 cups (875g) plain flour
    • 480g butter, at room temperature
    • 3 eggs
    • 3 egg yolks
    • 1 1/4 cups (250g) caster sugar
    • 1 pinch salt, to taste
    • To Decorate
    • icing sugar
    • lemon juice

    1. Biscuit Dough: Work all the biscuit dough ingredients into a dough. Cover and refrigerate for 1 hour.
    2. Divide the dough in two. Roll each piece out on a floured surface.
    3. Cut out biscuits and place onto a greased baking tray.
    4. Preheat oven to 200 degrees C and bake for about 10 minutes. Let cool on the tray for 5-10 minutes then transfer to a wire rack to cool fully.
    5. To Decorate: Mix together just enough icing sugar and lemon juice into to form a thin glaze. Brush over the biscuits and sprinkle with chocolate sprinkles or sugar strands, if desired.
