Lemon Yoghurt Dessert Cake

    A creamy, dense dessert cake that gets it's zing from yoghurt and lemons. Delicious served with strawberries and cream.

    Serves: 8 

    • 175 gm butter
    • 1 1/4 cup sugar
    • 3 large eggs
    • 1 cup vanilla yoghurt
    • grated zest of 2 lemons
    • juice of 2 lemons
    • 1/2 cup milk
    • 3 cups high grade flour
    • 2 heaped teaspoons baking powder

    1. Beat softened butter and sugar together until creamy.
    2. Add eggs one at a time, beating well after each addition.
    3. Add rind, juice, milk and yoghurt, keep beating with electric mixer until smooth.
    4. Fold in flour and baking powder gently until just combined, do not over mix.
    5. Pour into a greased and lined square baking tin.
    6. Bake for 35-40 minutes at 180 degrees celcius, fanbake, until lightly browned on top and a skewer inserted in middle of cake comes out clean
    7. Serve warm, with strawberries and cream and a dusting of icing sugar.
