Homemade Tomato Coulis

    Tomato coulis is so easy to make and has many uses from pastas to under meats and vegetables. It is a simple combination of garlic, herbs and tomatoes.

    Serves: 4 

    • 1 clove garlic, finely diced
    • 1 lemon, juiced
    • 1 tablespoon fresh herbs, such as parsley, chervil, tarragon or mint
    • 2 tablespoons extra virgin olive oil
    • 3 ripe tomatoes, diced
    • salt and pepper, to taste

    1. Transfer all the ingredients to a food processor.
    2. Blend until smooth and creamy.
