Rice and Sweet Potato Porridge

Rice porridge is a traditional Chinese breakfast, this version also includes sweet potato. Serve with traditional rice porridge condiments.

- 150g rice, rinsed
- 150g sweet potato, peeled and cut into 3cm cubes

- Place the rice in a large saucepan with 2 1/2 litres water. Bring to the boil over medium-high heat then turn the heat down to simmer.
- Simmer for 20 minutes stirring occasionally to prevent the rice sticking on the bottom of the saucepan.
- Add the sweet potatoes. Simmer for an additional 40 minutes or until the rice and sweet potatoes become soft and the porridge is thick.
