Asian Water Spinach

    Water spinach is a popular Asian vegetable that is high in nutrients, vitamins and minerals. This is a really quick stir fry method to cook it with a little garlic and spring onion.

    Serves: 2 

    • 1/2 tablespoon cooking oil
    • 1 spring onion, cut into 3cm lengths
    • 2 cloves garlic, finely diced
    • 500g water spinach, cut into 3cm lengths
    • salt, to taste
    • sesame oil, to taste

    1. Heat the oil in a wok over high heat until very hot. Stir fry the spring onion and garlic for 15 seconds.
    2. Add the water spinach and stir fry for 1 minute or until the leaves are wilted.
    3. Season with salt and stir. Sprinkle with sesame oil and toss. Serve.


    Water spinach can be purchased in Asian speciality shops. If unavailable substitute in spinach or watercress.
