Stir Fried Corn and Pine Nuts

    A colourful and healthy side dish this stir fried corn and pine nut side dish can be used with most barbecued or roasted meats.

    Serves: 4 

    • 150g pine nuts
    • 2 tablespoons vegetable oil
    • 300g corn kernels
    • 1/2 teaspoon salt
    • 1/4 chicken stock powder
    • 1/4 teaspoon cornflour, mixed with 2 teaspoons water

    1. Dry roast the pine nuts in a frying pan over medium heat. Set aside.
    2. Heat the oil in a wok until hot. Stir fry the corn then season with salt and chicken stock powder.
    3. Add the cornflour slurry then stir and toss with pine nuts. Serve.
