Vegetables in a Black Bean Sauce

This is a simple Chinese vegan dish that can be used as a main or a side dish. Celery, water chestnuts and mushrooms are stir fried in a black bean sauce then combined with noodles.


Serves: 4 

  • 2 teaspoons oyster sauce
  • 1 teaspoon sugar
  • 4 tablespoons water
  • 1 tablespoon oil
  • 1 tablespoon finely diced garlic
  • 2 tablespoons diced red chilli
  • 2 spring onions, cut into 2.5cm pieces
  • 2 tablespoons black bean and garlic sauce
  • 1 medium onion, diced
  • 1/2 teaspoon salt
  • 2 sticks celery, diced
  • 1 (225g) tin water chestnuts, drained and diced
  • 75g button mushrooms, diced
  • 12 yam bundles, drained
  • 1 tablespoon cornflour, mixed with 1 tablespoon water

  1. In a small bowl mix together the oyster sauce, sugar and water to make the sauce. Set aside.
  2. Heat a large frying pan with oil over high heat. Stir fry the garlic, chilli, spring onions and black bean and garlic sauce until fragrant; 2-3 minutes.
  3. Stir in the onion and salt then cook until soft; 3-4 minutes.
  4. Add the celery, water chestnuts and mushrooms then stir.
  5. Stir in the sauce and yam bundles then cover and simmer for 2-3 minutes.
  6. Add the cornflour slurry and stir until thickened. Serve hot.


Yam bundles are bundles of noodles made from the konjac plant. The noodles are also known as shirataki noodles. They are low in calories and carbohydrates. If you can't find the bundled versions, use shirataki noodles.
The noodles can be found in Asian speciality shops or online.

Oyster Sauces

Although some oyster sauces contain oysters many do not choosing to use mushrooms as the prime ingredient thus making them vegetarian and vegan friendly.
