Stir Fried Tofu and Shiitake Mushrooms

    This is a wonderful vegan stir fry that features tofu puffs and shiitake mushrooms; it also contains capsicum, baby corn and onion in an oyster sauce.

    Serves: 4 

    • Mushroom Marinade
    • 1 teaspoon soy sauce
    • 1 teaspoon black soy sauce
    • 1 teaspoon caster sugar
    • 1 teaspoon sesame oil
    • 8 dried shiitake mushrooms, soaked, stem removed and thickly sliced
    • Sauce
    • 3 tablespoons oyster sauce
    • 3 tablespoons water
    • 1 teaspoon sesame oil
    • 1/3 teaspoon salt
    • 1/3 teaspoon sugar
    • Stir Fry
    • 6 fried tofu puffs
    • 1 tablespoon oil
    • 1 tablespoon finely diced garlic
    • 1 medium onion, sliced
    • 1/2 teaspoon salt
    • 8 baby corn, diced
    • 1/2 green capsicum, sliced

    1. Mushroom Marinade: In a small bowl, mix together the soy sauce, black soy sauce, caster sugar and sesame oil. Add the shiitake mushrooms, turn to coat and let sit for 10 minutes.
    2. Sauce: In a small bowl mix together the oyster sauce, water, sesame oil, salt and sugar to make the sauce. Set aside
    3. Stir Fry: Meanwhile, blanch the tofu puffs in boiling water for 1-2 minutes. Drain well and set aside.
    4. Heat a large frying pan with 1 tablespoon oil over high heat. Stir fry the garlic until aromatic; 2-3 minutes.
    5. Add the onion and salt then cook until soft; 3-4 minutes.
    6. Stir in the shiitake mushrooms, tofu puffs, baby corn and green capsicum.
    7. Add the sauce then stir, cover and simmer for 1-2 minutes. Serve hot.


    Black soy sauce, dried shiitake mushrooms and fried tofu puffs can be purchased in Asian speciality shops.

    Oyster Sauce

    Although some oyster sauces contain oysters many do not choosing to use mushrooms as the prime ingredient thus making them vegetarian and vegan friendly.
