Stir Fried Beef and Zucchini

I make this when I am in a rush as it is so quick and easy. Thinly sliced beef is stir fried with zucchini then oyster sauce added. Serve with rice.


Serves: 4 

  • Marinade
  • 450g beef fillet steak, thinly sliced
  • 1/2 tablespoon sugar
  • 1/2 tablespoon light soy sauce or 1 tablespoon dark soy sauce
  • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
  • Stir Fry
  • 1 tablespoon oil
  • 1 tablespoon oil
  • 1 tablespoons finely diced garlic
  • 1 medium onion, sliced
  • 1/2 teaspoon salt
  • 3 zucchini, diced
  • 2 tablespoons water
  • Sauce
  • 1 tablespoon oyster sauce
  • 2 teaspoons caster sugar
  • 2 tablespoons water

  1. Marinade: Marinate the beef in sugar, soy sauce and cornflour slurry for 15 minutes.
  2. Stir Fry: Heat a large frying pan with oil over high heat. Stir fry beef until 70% done; about 2-3 minutes. Set aside.
  3. Heat the same frying pan with oil over high heat. Stir fry the garlic until aromatic; about 2-3 minutes.
  4. Add the onion and salt then cook until soft; about 3-4 minutes.
  5. Add the zucchini and 2 tablespoons of water then mix well. Cook until zucchini are tender; 2-3 minutes.
  6. Add the beef back into the frying pan.
  7. Sauce: Add the oyster sauce, sugar and water. Stir and heat through for 1-2 minutes. Serve.
