Stir Fried Squid and Vegetables

Quick and easy this is a light squid dish ideal for summer dinners. The stir fried squid is combined with capsicum, onion and Thai basil in a spicy sauce.


Serves: 4 

  • 2 squid tubes, halved, scored and cut into bite sized pieces
  • salt and pepper, to taste
  • cornflour, as needed
  • 2 tablespoons oil
  • 1 tablespoon oil
  • 2 teaspoons diced garlic
  • 2 spring onions, cut into 2.5cm pieces
  • 1 shallot, diced
  • 1 medium onion, diced
  • 1/2 teaspoon salt
  • 1 green capsicum, diced
  • 3 tablespoons fish sauce
  • 1 tablespoon hot pepper sauce
  • 1/2 teaspoon sugar
  • 1 tablespoon water
  • 30g Thai basil leaves

  1. Season the squid with salt, pepper and cornflour. Let sit for 15 minutes.
  2. Heat a large frying pan with oil over high heat. Stir fry the squid until cooked through and opaque; 3-5 minutes. Set aside.
  3. Heat the same frying pan with oil over high heat. Saute the garlic, spring onions and shallot until aromatic; 2-3 minutes.
  4. Add the onion and salt then cook until soft; 3-4 minutes.
  5. Stir in the green capsicum, fish sauce, hot pepper sauce, sugar and water. Allow to heat through; 1-2 minutes.
  6. Stir in the squid and basil then serve.


If your local supermarket doesn't stock Thai basil you can find it in Asian speciality shops.
