Chinese Spare Ribs and Tomato Stew

    This Asian style pork stew uses stir fried spare pork ribs, onion and tomatoes then combines this with a tomato pasta sauce and leaves to slowly stew.

    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce
    • 1-2 tablespoons cornflour mixed in 1 tablespoon water
    • 450g pork spare ribs, cut into 2.5cm pieces
    • Stir Fry
    • 1 tablespoon groundnut oil
    • 1 tablespoon groundnut oil
    • 1 medium onion, diced
    • 1 teaspoon salt
    • 2 tomatoes, diced
    • Sauce
    • 400g pasta sauce
    • 1 cup (250ml) water
    • 1/3 teaspoon sugar

    1. Marinade: Mix together the sugar, salt, soy sauce and cornflour slurry. Mix in the spare ribs, let marinate for 20 minutes.
    2. Stir Fry: Heat a large wok with oil over high heat. Brown the ribs on both sides, 3-5 minutes. Set aside.
    3. In the same wok heat oil over high heat. Stir fry the onion with salt until soft; about 3-4 minutes.
    4. Add diced tomatoes and ribs then mix well.
    5. Sauce: Stir in the pasta sauce, water and sugar then bring to the boil.
    6. Turn the heat down to medium-low and simmer for 30-40 minutes. Adjust seasoning accordingly.
