Chocolate Fudgey Pudding

    This is a rich, chocolate cake that's not overly sweet. Serve with a scoop of ice cream or whipped cream.

    Serves: 16 

    • 125g plain flour
    • 155g caster sugar
    • 6 tablespoons (45g) cocoa powder, divided
    • 2 teaspoons baking powder
    • 1/4 teaspoon salt
    • 125ml semi skimmed milk
    • 2 tablespoons vegetable oil
    • 1 teaspoon vanilla essence
    • 225g dark brown soft sugar
    • 450ml hot water

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. In a medium bowl, combine flour, caster sugar, 2 tablespoons cocoa, baking powder and salt. Stir in the milk, oil and vanilla until smooth. Spread in ungreased 23cm square baking tin.
    2. Combine brown sugar and 4 tablespoons cocoa; sprinkle over batter in the pan. Pour hot water over all; do not stir.
    3. Bake at 180 degrees C for 35 to 40 minutes. Serve warm.

    Used different ingredients. I love this cheesecake, and so does everyone else who has tasted it! This was the first cheesecake of any kind that I ever tried to make, and it turned out PERFECTLY! Everyone thought I bought it from a gourmet bakery. I used espresso instead of strong coffee, and I baked it in a water bath. It took 3 hours to make.  -  18 Jul 2008
