Prosciutto Wrapped Scallops with Spinach

    These dainty little prosciutto wrapped scallops were a great hit at my last dinner party. I serve them on spinach but you can use another vegetable accompaniment if desired.

    Serves: 4 

    • 1 tablespoon butter
    • 2 tablespoons dry white wine
    • 1 shallot or 1/2 onion, finely diced
    • 200g fresh spinach, washed and drained
    • salt and pepper,to taste
    • 4 scallops
    • 4 slices prosciutto
    • 4 wooden skewers
    • 1 tablespoon butter

    1. In a medium saucepan on medium heat add one tablespoon of butter the white wine and shallot. Add spinach and then season to taste. Cook on low heat until the water has completely evaporated.
    2. Wrap each scallop with a slice of ham and secure with a wooden skewer.
    3. In a small frying pan on high heat add the remaining tablespoon of butter and cook skewers for one minute on each side.
    4. Serve the scallops over the cooked spinach.
