Could lunch get any easier than two ingredients? Tomatoes are stuffed with sausage meat and baked in the oven. Good one to make on the weekends with the help of the kids.


Serves: 4 

  • 4 large tomatoes
  • 500g sausage meat

Preparation:10min  ›  Cook:30min  ›  Ready in:40min 

  1. Cut the top of each tomato. Scoop out the tomato pulp and reserve. Place the hollowed out tomatoes into a baking dish.
  2. Place the tomato pulp and sausage meat into a saucepan. Cook for 5 minutes over low heat, stirring to remove any lumps.
  3. Once there is no more lumps, reduce the heat to low and cook for 20 minutes.
  4. Preheat oven to 190 degrees C.
  5. Fill the tomatoes with the meat mixture and bake in preheated oven for 15 minutes. Serve immediately.
