Frankfurter, Tomato and Pasta Bake

    This is an easy pasta bake for dinner that uses frankfurters as the meat. Great for school nights as it is quick to make and the kids love it.

    Serves: 4 

    • 350g dried pasta
    • 1 tablespoon olive oil
    • 1 tablespoon oil
    • 1 tablespoon diced garlic
    • 1 medium onion, diced
    • 1/2 teaspoon salt
    • 350g frankfurters, thickly sliced
    • 2 tomatoes, diced
    • 3 tablespoons tomato sauce
    • 2 tablespoons tomato puree
    • 1 teaspoon salt
    • 1 teaspoon sugar
    • 1/2 cup (125ml) water
    • 115g Cheddar or mozzarella cheese, grated
    • 1 tablespoon dried basil

    1. Preheat the oven to 200 degrees C.
    2. Bring a large saucepan of salted water to the boil. Cook the pasta for 8-10 minutes or until al-dente. Drain and toss with 1 tablespoon olive oil. Transfer to a baking dish and set aside.
    3. Heat a large frying pan with 1 tablespoon oil over high heat. Stir fry the garlic until fragrant; about 2-3 minutes.
    4. Stir in the onion and salt and cook until soft; 3-4 minutes.
    5. Add the frankfurters and stir until heated through; 2-3 minutes.
    6. Stir in the tomatoes, tomato sauce, tomato puree, salt, sugar and water. Stir well and bring to the boil.
    7. Once boiled pour over the pasta and sprinkle with cheese. Bake in the middle of the preheated oven until the cheese turns golden; around 10-15 minutes.
    8. Sprinkle with dried basil and serve.

    love love yummy easy friday night meal i added some frozen veges to the mix went down like a treat even the fussy 2 year old loves it definatley make again  -  05 Aug 2011
