Chinese Salted Pork Fried Rice

    This is a very quick and easy fried rice that uses a Chinese style of preserved salted pork and Chinese celery, if you cannot find these substitute for bacon and normal celery.

    Serves: 2 

    • 1 tablespoon vegetable oil
    • 1/2 yellow capsicums, finely diced
    • 1 stick Chinese celery, leaves discarded and cut into 1cm pieces
    • 1 1/2 teaspoons salt
    • 400g cold cooked rice, grains separated
    • 100g cooked Chinese preserved salted pork, finely diced

    1. Heat the oil in a wok over high heat until hot. Add the capsicum and celery and stir fry until soft.
    2. Add the salt and rice then stir for about 1 minute. Turn the heat down to medium then add the pork and stir well.
    3. Stir fry the pork until the fat from the pork is rendered. Transfer to a serving dish.


    Chinese celery and preserved salted meat can be purchase in Asian speciality shops. If Chinese celery is unavailable, use ordinary celery. If preserved salted meat is unavailable, use streaky bacon.
