Salmon with Wasabi Cream on Blinis

    This is a very easy yet very elegant entree suitable for your most special dinners. Raw salmon is served on a blini with avocado and a wasabi flavoured creme freiche.

    Serves: 4 

    • 150ml creme fraiche
    • 1 teaspoon wasabi
    • 3 tablespoons vodka
    • salt and pepper, to taste
    • 8 slices raw salmon (from a fillet)
    • 4 tablespoons olive oil
    • 2 teaspoons lemon juice
    • 4 blinis
    • 1 avocado, thinly sliced
    • caviar, for garnish
    • celery leaves, for garnish

    1. Mix together the creme fraiche, wasabi, vodka, salt and pepper. Cover and refrigerate.
    2. Marinate the salmon in olive oil and lemon juice for 1-2 minutes.
    3. Toast or microwave blinis for a few seconds. Top each blini with avocado, salmon and a small dollop of creme fraiche.
    4. Garnish with caviar and celery leaves.


    If your local supermarket doesn't stock wasabi, you can find it in Asian speciality shops or online.

    I was a bit concerned about finding/using fresh fish so just ended up using smoked salmon but it was still great and a big hit with my friends  -  07 Jun 2011


    I made this and it was fab... except I found the vodka overpowered the creme fraiche, so I added a shooter of vodka on people's plates (actually I made shooter glasses out of ice and put those on the plates!) it was easy and impressive!  -  10 Dec 2012  (Review from Allrecipes UK & Ireland)
