Roast Lamb with Chanterelle Mushrooms

    Rack of lamb is quite easy to cook yet always has a special presentation factor that makes it great for special dinners. This recipe has the lamb being served with green beans and chanterelle mushrooms.

    Serves: 8 

    • 5 sprigs lavender
    • 2 racks lamb
    • olive oil, as needed
    • 1kg green beans, top and tailed
    • 2 shallots, finely diced
    • 400g chanterelle mushrooms
    • 1 pinch fresh thyme

    1. Preheat the oven to 210 degrees C.
    2. Place the lavender inside two racks of lamb. Tie the 2 racks together with kitchen string.
    3. Brush the lamb with olive oil and roast for 40 minutes.
    4. Meanwhile, cook the green beans for 10 minutes in boiling salted water. Drain.
    5. Heat olive oil in a frying pan. Saute the shallots over medium heat for 5 minutes.
    6. Add the chanterelles and saute until the pan is dry. Add the green beans and cook for a few minutes. Sprinkle with thyme.
    7. Remove lamb from the oven. Cut off the twine and remove lavender. Cut the racks into individual chops. Serve with the green beans.


    Chanterelle mushrooms and lavender can be bought in speciality shops or online.
