Stri Fried Pork in Black Pepper Sauce

    Pork chops are added to a rich and flavoursome black pepper sauce with capsicums and onions. Serve hot with rice.

    Serves: 4 

    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce
    • 1-2 tablespoons cornflour, mixed with 1 tablespoon water
    • 6 boneless pork chops, pounded evenly
    • 1 tablespoon groundnut oil
    • 150ml water
    • 1 teaspoon chicken stock powder
    • 1 tablespoon oyster sauce
    • 1/2 tablespoon black soy sauce
    • 1 tablespoon groundnut oil
    • 2 tablespoons finely diced garlic
    • 1 medium onion, diced
    • 1 teaspoon salt
    • 1/2 green capsicum, diced
    • 2 tablespoons black pepper
    • 2 tablespoons cornflour, mixed with 1 tablespoon of water
    • 1 tablespoon honey

    1. Make a marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the pork chops then let marinate for 20 minutes.
    2. In a small bowl, mix together the water, chicken stock powder, oyster sauce and black soy sauce to make the sauce. Set aside.
    3. Heat a large frying pan with oil over high heat. Pan fry the pork chops until brown on both sides, 3-5 minutes. Reduce the heat to medium and cook until the pork chops are done; 3-5 minutes more. Set aside.
    4. Heat the same frying pan with oil over high heat. Stir fry the garlic and black pepper until fragrant; about 3-4 minutes.
    5. Add the onions with 1 teaspoon salt and fry until soft, about 3-4 minutes. Stir in the green capsicums and sauce then heat through; 1-2 minutes.
    6. Add the cornflour slurry and stir until the sauce is thickened. Turn off the heat and add the honey and pork chops. Mix well and serve.


    Black soy sauce can be purchased in Asian speciality shops.
