Easy Parmesan Biscuits

    These are the easiest cheese biscuits; I make them for a savoury snack or to serve with soup during winter.

    Serves: 8 

    • 130g freshly grated Parmesan
    • 120g butter
    • 1 1/4 cups (150g) flour

    Preparation:30min  ›  Cook:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour45min 

    1. Rub together the butter and flour. Add the Parmesan. Work into a solid dough. Form a ball and store in the fridge in cling film for at least an hour or overnight.
    2. Roll out the chilled dough between two sheets of baking paper to a thickness of 1cm. Use a small biscuit cutter or a glass to cut into round biscuits.
    3. Re-roll dough and cut further rounds, as many as possible. Place on a baking tray lined with baking paper.
    4. Bake in a preheated 180 degrees C oven for 15 minutes. Cool before serving.

    Seemed a bit dry. I would add milk or an egg. I added some cumin to add some flavor. Not too sure if I would make them again. I love the limited ingredients but they aren't too yummy.  -  31 Jul 2011


    Delicious , I added paprika and dry mustard to half of the dough, loved both versions. Lovely savory biscuit . Needed some salt & pepper.  -  14 Feb 2014
