Chinese Stir Fried Tofu

    Tofu is blanched and then stir fried before being drizzled in a spicy homemade sauce in this Chinese favourite.

    Serves: 4 

    • 500g firm tofu, cut into bite-sized pieces
    • 1 tablespoon vegetable oil
    • 3 red chillies, julienned
    • salt, to taste
    • 1/2 teaspoon chicken stock powder
    • 1/2 teaspoon vinegar
    • 1 teaspoon soy sauce
    • 1 teaspoon finely diced spring onion
    • 2 teaspoons vegetable oil

    1. Blanch the tofu in lightly salted boiling water. Drain and set aside.
    2. Heat the oil in a wok until hot. Add the tofu and fry until golden all over. Transfer to a serving dish.
    3. Make the sauce by combining the chillies, salt, chicken stock granules, vinegar, soy sauce and spring onion in a heat-safe bowl. Heat 2 teaspoons oil until very hot and pour into the bowl, mix well.
    4. Drizzle the sauce over the fried tofu and serve.
