Prawn and Avocado Salad with Youghurt and Tomato Dressing

    Cooked prawns make this so quick and easy to prepare or you can barbecue your own for extra freshness and flavour.

    Serves: 4 

    • 2 ripe avocados, stones removed
    • 100g cooked prawns
    • 2 tablespoons Greek yoghurt
    • 1 tablespoon tomato puree
    • a handful lettuce

    Preparation:15min  ›  Ready in:15min 

    1. Dice the avocados.
    2. Add the avocados and prawns to a medium bowl.
    3. Mix the yoghurt and tomato puree in a small bowl.
    4. Pour the sauce over the salad and mix well.
    5. Serve with lettuce on the side.
