Green Beans and Asparagus wrapped in Ham

    This is a wonderful entree at a fancy dinner party or equally good as a post Christmas feast light lunch using up leftover ham.

    Serves: 4 

    • 500g green beans, topped and tailed
    • 250g asparagus, trimmed
    • 4 slices ham
    • 1 teaspoon salt
    • salt and pepper, to taste

    1. In a large saucepan bring water to the boil then add 1 teaspoon of salt and the green beans; cook for 8 minutes.
    2. Add asparagus and cook for 2 more minutes. Drain the vegetables.
    3. Wrap one slice of ham around a dozen of the green beans and 2 or 3 asparagus spears. Serve immediately.
