    A delightful way to present fresh prawns which is quick and simple to make. Prawns are stir fried in a gingery soy sauce. Serve with rice.

    Serves: 4 

    • 100ml oil, divided
    • 750g raw prawns, deveined, with shell left on and patted dry
    • 1 tablespoon spring onions, finely chopped
    • 1 tablespoon fresh ginger, finely chopped
    • 1 tablespoon rice wine
    • 2 tablespoons chicken stock
    • 1/4 teaspoon salt
    • 2 tablespoons sugar
    • chicken stock powder to taste
    • 2 teaspoons soy sauce

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Heat 3/4 of the oil in a wok until hot. Add prawns and fry until they turn pink, set aside.
    2. Add the remaining oil into the wok and heat. Add spring onions and ginger, stir fry until fragrant.
    3. Transfer the prawns back into the wok and stir fry for 1 minute. Add rice wine, stock, salt, sugar, chicken stock powder and soy sauce. Bring the sauce to the boil.
    4. Turn the heat to low and stir fry for about 2 minutes. If there is a lot of sauce, reduce to thicken. Arrange the prawns on a serving dish and pour the sauce all over.

    The recipe was SO outstanding! I don't usually cook prawns with shell on when not on the grill, but I found that this stir fry with the shell on does the same thing -- preserves the flavor and keeps the prawn juicy! Loved the sauce -- so simple and so tasty. My entire family, including two picky teenagers, really felt that this recipe is restaurant worthy. I did a couple of things differently -- used less oil, and instead of removing the prawns, added the spring onions to the mix and used powdered ginger instead of fresh ginger (added to taste).
