    This is an easy and satisfying dish. Pork is stir-fried with onions, carrots and baby corn and flavoured with fish sauce and Thai basil.

    Ingredients
    Serves: 4 

    • Marinade
    • 1/2 tablespoon sugar
    • 1 teaspoon salt
    • 1/2 tablespoon light soy sauce
    • 1 tablespoon cornflour, mixed with 1 tablespoon water
    • 450g pork fillet, sliced
    • 1 tablespoon peanut oil
    • Sauce
    • 2 tablespoons fish sauce
    • 1/3 teaspoon sugar
    • 1 tablespoon Chinese rice wine
    • 1 tablespoon peanut oil
    • 1 tablespoon finely chopped garlic
    • 2 spring onions, chopped into 2.5cm pieces
    • 1 tablespoon finely chopped eschallots
    • 1 medium onion, sliced
    • 1/2 teaspoon salt
    • 8 baby corn, chopped into 2.5cm pieces
    • 1 carrot, diced
    • 10 leaves Thai basil

    Directions

    1. Make the marinade by mixing together the sugar, salt, soy sauce and cornflour slurry. Mix in the pork, let marinate for 15 minutes.
    2. In a small bowl, mix together the fish sauce, sugar and rice wine to make the sauce. Set aside.
    3. In a large frying pan, heat 1 tablespoon oil over high heat. Stir fry the pork until cooked through, 4-5 minutes. Set aside.
    4. In the same frying pan, heat 1 tablespoon oil over high heat. Stir fry the garlic, spring onions and eschallots until fragrant, 3-4 minutes.
    5. Stir in the onion with salt and cook until soft, 3-4 minutes. Add the carrot and baby corn and mix well. Stir in the pork and sauce, mix well, heat through. Sprinkle with Thai basil and serve.
