Sweet and Sour Fried Eggs

    This is an interesting Chinese-style take on simple fried eggs which is simple to make and delicious. Enjoy as breakfast, or as a light lunch with white rice.

    Serves: 2 

    • 1 teaspoon Chinese black vinegar
    • 2 teaspoons sugar
    • 1 teaspoon light soy sauce
    • 1 1/2 tablespoons cooking oil
    • 4 eggs

    1. In a small bowl, make the sauce by mixing together the black vinegar, sugar and soy sauce.
    2. Heat the oil in a large frying pan until very hot. Add the eggs, one at a time (keeping them apart). Fry on both sides until the whites are crispy and the egg yolks are semi-set. Remove from the pan and set aside.
    3. Add the sauce to frying pan and turn the heat down to low. Add the eggs back into the pan and coat with the sauce. Serve immediately.
