This is a delicious risotto style dish that is quick and easy to prepare. It's an easy dinner and very economical. Not for the risotto purists!
I used aborio rice and halved the recipe as I only wanted a small amount, it was still hard and dried out after 5mins cooking, so I added more stock and cooked again for another 5mins, still hard and uncooked, so added further stock to cover, covered the bowl with gladwrap and cooked again for another 5mins, finally cooked! Added the cheese which made it creamier and the end result was good, I will definitely do again as it's good for a quick lunch to take to work, but I will change the cooking method and cover the bowl, and add more stock. - 16 Mar 2011
