This is a dish for the lover of spicy food! Green chillies are stir fried with spring onions, ginger, garlic and seasonings. Serve with plenty of rice.
Heat oil in a wok over high heat. Stir fry the chillies for 1 minute, set aside and drain all but 1 tablespoon oil.
Heat the reserved oil in the wok until hot, then stir fry the spring onions, ginger and garlic until fragrant.
Add the chillies and stir fry until dark and light brown spots appear on the surface.
Stir in the salt, optional MSG, sugar, black vinegar, dark soy sauce and oyster sauce and stir for a few minutes to allow flavours to penetrate into the chillies.
