This lovely compote is perfect on toast, with yoghurt, with cake, or on its own. It's a great snack for children. Will keep in the fridge up to a week.


Serves: 4 

  • 500g ripe apricots, stones removed
  • 100g caster sugar
  • 100ml water

Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

  1. In a medium saucepan, heat the water on a low heat then add the apricots. Cook for 20 minutes.
  2. Add sugar before removing from heat. Let the compote cool down for at least 30 minutes and then serve.
