This is a delicious jelly flavoured with lychees. It is very simple to make and an unusual take on the usual fruit-flavoured jellies.
1 teaspoon (15g) gelatine granules
6 teaspoons (30g) sugar
250g tinned lychees, drained and diced
300ml lychee syrup (from the tin)
200ml full cream milk

- Soak the gelatine in 50ml cold water for about 5 minutes, then gently warm the mixture until the gelatine has dissolved. Set aside.
- Bring 100ml water to the boil. Stir in the sugar until dissolved. Stir in the lychees and syrup.
- Mix the lychee mixture, gelatine mixture and milk together. Pour into a container and chill for 4 hours or until set.
The milk in the mixture had split, it looks not as on the picture
