This is a delicious jelly flavoured with lychees. It is very simple to make and an unusual take on the usual fruit-flavoured jellies.


Serves: 4 

  • 1 teaspoon (15g) gelatine granules
  • 150ml water
  • 6 teaspoons (30g) sugar
  • 250g tinned lychees, drained and diced
  • 300ml lychee syrup (from the tin)
  • 200ml full cream milk

Preparation:10min  ›  Cook:5min  ›  Extra time:4hours chilling  ›  Ready in:4hours15min 

  1. Soak the gelatine in 50ml cold water for about 5 minutes, then gently warm the mixture until the gelatine has dissolved. Set aside.
  2. Bring 100ml water to the boil. Stir in the sugar until dissolved. Stir in the lychees and syrup.
  3. Mix the lychee mixture, gelatine mixture and milk together. Pour into a container and chill for 4 hours or until set.
