Stir Fried Broccoli and Carrot Side Dish

    Here's a way to prepare broccoli and carrots as a side dish that will please the fussiest eater - seasoned and stir fried to perfection.

    Serves: 3 

    • 500g broccoli, cut into florets
    • 1 carrot, thinly sliced
    • 1 teaspoon cornflour, mixed with 2 teaspoons water
    • salt to taste
    • chicken stock powder to taste
    • 2 tablespoons peanut oil

    1. Blanch the broccoli in boiling water for 2 minutes. Use a slotted spoon to remove the broccoli and drain.
    2. In the same pot, bring the water back to the boil. Add the sliced carrot and cook for 1 minute, drain.
    3. In a small bowl, mix together the cornflour slurry, salt and chicken stock powder. Set aside.
    4. Heat the oil in a wok until very hot. Stir fry the broccoli and carrot for 2 minutes over high heat.
    5. Add the seasoned cornflour slurry and stir into the wok. Continue to stir until the sauce coats the vegetables evenly. Serve.
