Pork Simmered in Honey and Ginger
Pork fillets are wonderful simmered in a marinade of honey, ginger and Chinese five spice. Serve with freshly cooked rice, if desired.

3 pork fillets
large piece of fresh ginger, peeled and grated
4 cloves garlic, peeled and grated
4 tablespoons olive oil
4 tablespoons soy sauce
4 tablespoons vegetable oil
5 teaspoons Chinese five spice
6 tablespoons honey

Mix together the ginger, garlic, honey, Chinese five spice, soy sauce and vegetable oil.
Transfer the pork fillets into a large resealable plastic bag. Add the marinade, press out the air and seal. Gently massage the pork with the marinade for 1 minute, then chill for 2 hours.
Heat olive oil in a large frying pan over medium heat. Pan-sear the pork fillets evenly on all sides. Pour the marinade over and simmer over low heat for 30 minutes. Slice and serve.

First time making this, I only marinated for 15 minutes as had no time. As a healthier alternative, I used 3 tablespoons of cold pressed organic coconut oil instead of the vegetable oil and I don't use bags to marinate, just a dish, bags are messy.
Totally Yummeee! LOVED IT!!! Will be making it again using different meats too!

This is such an easy dish and totally scrummy! I didn't have a bag so put it in a dish covered with plastic wrap in the morning and cooked it for dinner, really good.
