Spinach and Goats Cheese Quiche

Quiche is very simple to make with prepared shortcrust pastry and tastes great. It's perfect for lunch or a light dinner, and also as picnic food.


Serves: 8 

  • 1kg frozen chopped spinach
  • 1 sheet ready-rolled shortcrust pastry
  • 1 teaspoon vegetable oil for greasing
  • 150g goats cheese
  • 2 eggs
  • 200ml light thickened cream
  • 4-6 rashers thin sliced middle bacon
  • 75g grated Gruyere cheese (optional)
  • salt and pepper to taste

  1. Preheat the oven to 180 C.
  2. Grease a quiche dish, then line with shortcrust pastry. Prick the pastry all over with a fork.
  3. Arrange the bacon in the pastry case in the shape of a star. Set aside.
  4. Heat a large frying pan over medium heat. Add the spinach and heat for about 15 minutes or until the spinach has thawed and the water has evaporated. Drain and cool slightly.
  5. Meanwhile, beat together the eggs in a large bowl. Stir in the cream, salt, pepper and spinach.
  6. Pour egg mixture over the bacon and top with slices of goats cheese (form a circle and then place one in the centre). Sprinkle Gruyere cheese on top, if using.
  7. Bake in preheated oven for about 45 minutes or until cooked and golden.
