Chicken Livers in Red Wine and Thyme Sauce

Lovely served on a bed of lettuce with crusty rolls

Serves: 4 

  • 250g chicken livers
  • 3 tablespoons oil
  • splash lemon juice
  • 2 garlic cloves, finely chopped
  • 1 tablespoon chopped thyme
  • 1/3 cup (80ml) red wine
  • salt and pepper

Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

  1. Wash and pat dry the chicken livers
  2. Heat the oil with the splash of lemon juice in a frying pan, add the garlic and cook stirring over a medium heat for 2 minutes.
  3. Add chicken livers, thyme and wine. season with salt and pepper and cook for 3 - 4 minutes
  4. Remove from heat and spoon the chicken livers over lettuce, pour over cooking juices and sprinkle with fresh thyme sprigs.
