Baked Fish and Vegetables

    This is a fish dish I cook when mates come around. I prepare the vegetables ahead of time then when they start to arrive I put it all together and pop it in the oven. After a few drinks, dinner is ready.

    Serves: 4 

    • 4 white fish fillets
    • 2 onions
    • 2 capsicums
    • 2 zucchinis
    • 2 cloves garlic
    • 1 pinch salt and cracked pepper
    • 1 tin (400g) diced tomatoes
    • some olive oil

    Preparation:15min  ›  Cook:40min  ›  Ready in:55min 

    1. Cut all the vegetables into similar sized pieces.
    2. Add some oil to a frypan then gently cook the vegetables and garlic until soft.
    3. Season with salt and cracked pepper then add the tin of tomatoes. Stir to combine then take off the heat.
    4. Lightly oil the bottom of a baking dish. Then lay the fish fillets evenly across the bottom and add the prepared vegetable and tomato mix on top.
    5. Place in an oven at 180 degrees C and cook for about half an hour, time will vary depending how thick your fillets are.
