    This is an extension on traditional guacamole. Using guacamole on the bottom layer, with layers of ham, vegies and cheese. Serve it with corn chips and it includes all the food groups. A friend of mine calls it a meal on a chip! Even people who don't like avocados like my Guacamole Dip.

    Ingredients
    Makes: 1 Platter

    • 2-3 good size, very ripe avocados
    • 1 small onion, finely diced
    • 1 good squeeze of lemon Juice (bottled is fine)
    • 1 tablespoon McCormicks Garlic Season-All
    • 2 tsp minced garlic
    • chilli sauce to taste
    • 2-3 tablespoons mayonnaise (I use light)
    • salt & pepper to taste
    • 1/2 jar your favourite salsa
    • 1-2 handfuls finely diced ham
    • 1 large tomato, diced
    • 1/2 small capsicum, finely diced
    • 2-3 handfuls grated cheese

    1. To make the guacamole:- mash avocado flesh in a large bowl. Add finely diced onion, a squeeze of lemon juice, garlic, Season-All, chilli, mayonnaise, salt and pepper. Mix well. Adjust the quantities of all ingredients to suit your own taste.
    2. Assemble the dip:- spread the guacamole over the base of a large shallow dish. Drop spoonfuls of salsa all over the guacamole and carefully spread to create an even layer. Sprinkle over a layer of finely diced ham, press down gently with the palms of your hands. Dice the tomato finely then cup it in your hands and squeeze out excess liquid (this stops the dip from being too sloppy) then spread evenly over the top of the layer of ham. Sprinkle over the finely diced capsicum. Top with a generous layer of grated cheese. Make sure you use a good tasty cheese and grate it yourself, it does make a difference.
    3. Serve with unflavoured corn chips.

    Tip

    All the quantities here are approximates. I usually let my taste buds decide how much is enough. Play around with the quantities to suit yourself.

    Serving suggestion

    Many people don't like spicy food, but many do. So I will often split this into two smaller platters. I make one up with no chilli at all and a mild salsa, then I add chilli to the guacamole in the second one and use a hot or medium salsa. Make sure you remember which is which!

    Yum, Yum, Yum! I make this for so many parties, and friends always ask me to bring it to their parties. Sometimes make just the guacamoli to have with cornchips for a snack or on nacho's - 14 Mar 2012
