Mint sauce is the natural accompaniment to lamb and because mint is sweet it requires no extra sugar - unless you insist on it!

Ingredients
Serves: 4 

  • 1 tablespoon minced fresh mint leaves
  • 4 tablespoons red wine vinegar

Directions
Preparation:2min  ›  Extra time:10min marinating  ›  Ready in:12min 

  1. In a small bowl, stir together mint leaves and vinegar. Let stand for 10 minutes before using to blend flavours.

This is the mint sauce I have been looking for, for a long time. It was perfect with the roasted rack of lamb. I did add a good amount of sugar. It turned out perfect. I will use this a lot now. Thank you for putting it on. - 29 Sep 2008

A small amount of boiling water poured over the mint brings out the flavour - then add the vinegar and a little sugar. - 05 Jun 2012

Altered ingredient amounts. Way too tart. Definitely stir in a little white sugar bit by bit until it is how you like it. - 29 Sep 2008
