Torta, quiche, fritatta...... it's an egg in pastry shell dish, with no pastry top on it. Call it what you like. It's tasty and easily adaptable to ingredients in your fridge. Cheap and very easy to make for breakfast, lunch or dinner. Enjoy!

Serves: 6 

  • 2 sheets shortcrust pastry frozen (or home made)
  • 60g butter
  • 100g mushrooms, coarsly chopped
  • 1 onion, finely chopped
  • 150g bacon, diced
  • 1 teaspoon dried parsley
  • 2 cloves garlic, finely diced
  • 1 teaspoon dried thyme
  • 1/4 teaspoon ground cayenne pepper
  • 250 ml cream
  • 6 eggs
  • 150g feta cheese, cubed or crumbled
  • 1/4 teaspoon salt
  • 100g cheddar cheese, grated

Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

  1. Line a greased pastry or quiche dish with shortcrust pastry and dry bake for 5 minutes on 180 degrees C. Set aside to cool and turn the oven temperature up to 190 degrees.
  2. In a medium temperature frypan , fry up the butter, mushrooms, onion, bacon, garlic, thyme, parsley, cayenne pepper. Cook until the mushrooms have become slightly soft.
  3. In a bowl, mix together the eggs, cream feta and salt. Add in the mixture from the fry pan and stir.
  4. Immediately pour the entire contents of the bowl into the pastry lined dish and bake in a 190 degree oven for 30 or 40 minutes or till the centre doesn't look like liquid anymore.


Use leftover vegetables , chopped up and added to the fry pan mixture.
