    This low calorie soup will help you keep on target for your weight-loss goals and is super filling as well.

    Ingredients
    Serves: 10 

    • 3g fresh mint leaves (about a couple of teaspoons)
    • 6g fresh coriander (about a tablespoon)
    • 16g fresh curly parsley (about 1/4 cup)
    • 1 can (440g) diced tomatoes - no added salt or sugar
    • 1 medium onion
    • 1 medium swede
    • 2 medium potatoes
    • 4 large carrots
    • 1 medium parsnip
    • 1 cup corn kernels
    • 1 cup frozen peas
    • 1 Litre water

    Directions
    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Peel potatoes, carrots, onion, swede, and parsnip, dice finely and add to stock pot
    2. Add peas, corn, can of tomatoes and water, boil on medium heat with lid on pot until all ingredients and tender
    3. Chop mint, coriander and parsley finely, add to pot
    4. Let cook for 10 to 15 minutes
    5. Serve using 250ml (1 cup) measure. If consistency not too your liking, add 100ml of hot water
