Katie's Potato and Leek Soup

    This is my simple recipe for an old favourite. Healthy and warming and only three ingredients in it!

    Serves: 6 

    • 190g leek (about 1 1/2 leeks)
    • 750g potatoes
    • 1 Litre water

    Preparation:10min  ›  Cook:20min  ›  Ready in:30min 

    1. Peel potatoes and dice, then add to pot. Rinse leek under tap and then slice thinly, add to pot.
    2. Add water and boil until potatoes are tender. Let cook for 10 to 15 minutes.
    3. Blend with hand blender until smooth, transfer to a bowl or containers for serving.

    This is a thick and creamy soup but a bit on the bland side. I added some nutritional yeast to give it some flavour.  -  04 Nov 2015
