Pumpkin and Mint Soup

    This refreshing and healthy pumpkin soup with a difference will help warm you up on a cold winters night.

    Serves: 7 

    • 1kg pumpkin
    • 12g fresh mint leaves
    • 1 Litre water

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Cut skin from pumpkin and dice, add to pot. Rinse mint under tap then pull leaves from stems, add to pot
    2. Add water and boil until pumpkin is tender. Let cook for 10 to 15 minutes
    3. Blend with hand blender until smooth. Either serve immediately or let cool and transfer to containers for freezing or refrigeration
