    Sweetened with honey, coconut and fresh fruit, these are perfect for cooling off on a hot day. Dessert, and healthy!


    Makes: 8 iceblocks

    • 1 1/2 cups Greek yoghurt
    • 2 ripe bananas
    • 1/2 cup milk
    • 1/2 cup coconut milk
    • 3 tablespoons honey, or to taste
    • 3/4 cup unsweetened shredded coconut

    1. Place the yoghurt, bananas, milk, coconut milk and honey in a blender. Blend until smooth. Taste to see if it is sweet enough; remember that you want it to be a little sweeter than you like it because when it is cold it will taste less sweet. Stir in coconut flakes, then re-cover the blender and pulse briefly to combine.
    2. Pour into ice block moulds and freeze at least 5 hours; overnight is best.
    3. For easy unmoulding, run the frozen ice blocks under warm water for 10 to 15 seconds before removing them.
