Prawn, Mussel and Squid Salad

This is a seafood lover's ideal salad, and feel free to add more choices. The dressing is a slightly sweet, slightly spicy combination that doesn't overpower the seafood.

Ingredients
Serves: 4
- 100g prawns, shelled
- 200g mussels, rinsed and debearded
- 100g squid, cleaned and scored
- 5 cloves garlic, diced
- 5 Thai chillies, red or green, sliced thin
- 1-2 limes, juiced
- 2-3 tablespoons fish sauce
- 1/2 teaspoon palm sugar
- 1 handful celery leaves, diced
- 2 shallots, sliced thin
- 1 head crunchy lettuce, washed

- Quickly cook the seafood separately in seasoned boiling water. Shell the mussels and combine all the seafood together in a bowl.
- With a mortar and pestle smash the garlic and chillies. Stir in the lime juice, fish sauce and palm sugar.
- Pour this dressing over the seafood. Add the celery leaves and sliced shallots. Toss gently.
- To serve place the lettuce on a platter to make a bed. Place the seafood salad on top of the lettuce and serve.
